This organic millet salad is an excellent recipe for the summer. Eaten cold, it’s a refreshing alternative to regular first courses.
Millet is a naturally gluten-free cereal, and organic millet like ours is able to provide a large amount of nutritious substances useful for our diet.
Millet is easily digestible, making it ideal for children and the elderly, as well as a sustainable, delicious alternative to add to our daily diet.
All Spigabuona flours are:
- with no added sugar
- without milk derivatives
- without hydroxypropylmethylcellulose
- organic
- stone grounded
- Preparation: 10 minutes

- Baking time: 20 minutes
Ingredients
- Millet in grains
- Peeled, sautéed mixed vegetables: peppers, courgettes, carrots and celery.
METHOD
- Wash the organic millet carefully and toast it in the pan for a few minutes.
- Place in plenty of salted water (3 parts water for 1 part millet), bring to the boil and cook over a low heat for 15 minutes.
- Drain, leave to cool and add the vegetables (peppers, courgettes, carrots and celery), already peeled and sautéed with some finely chopped onion.
- Serve cold.
