This organic millet salad is an excellent recipe for the summer. Eaten cold, it’s a refreshing alternative to regular first courses.

Millet is a naturally gluten-free cereal, and organic millet like ours is able to provide a large amount of nutritious substances useful for our diet.

Millet is easily digestible, making it ideal for children and the elderly, as well as a sustainable, delicious alternative to add to our daily diet.

  1. Wash the organic millet carefully and toast it in the pan for a few minutes.
  2. Place in plenty of salted water (3 parts water for 1 part millet), bring to the boil and cook over a low heat for 15 minutes.
  3. Drain, leave to cool and add the vegetables (peppers, courgettes, carrots and celery), already peeled and sautéed with some finely chopped onion.
  4. Serve cold.
