Make your children’s parties fun with these fluffy gluten free pizzas, designed to meet the needs of those who suffer from coeliac disease or are gluten or lactose intolerant. 

They are perfect for aperitifs, snacks or buffets.

Ingredients

PROCEDURE

In a bowl, combine the flour, the yeast and all the water. Add the salt and with a wooden spoon, knead the dough for 1 minute until it forms a coarse mixture Use the spatula to clean the spoon.

Add theoil and with the spatula take the dough from the edges and bring it towards the centre Knead the dough with the spatula for 1 minute (no longer) Stop when the dough is soft and homogeneous.

Place the dough in an oiled bowl and let rise for 2 hours at 26-28°Cuntil doubled. Dust the work surface with Rice flour..

Once risen, pour the mixture onto the work surface. Roll out the dough weighing 50 gr and roll out round pizzas on an oiled rectangular baking tray.

Season the surface with tomato and leave to rise another 2 hours. Bake at 250°C for 15 minutes just the base. Stuff as desired and bake another 5 minutes.
